Quick and Easy Chicken Soup

Chicken soup is the best soup when you are feeling a little under the weather or maybe just a little down in the dumps.  The canned soup is good, but sometimes you just want something like mom makes to make you feel better.  Chicken soup is also a tasty and quick supper to make for your family when you are on a time schedule.

The first thing that you need to do is get is something to cook the soup in. Now you can make chicken soup in a nice big soup pot on your stove, or you can do what I do and use your crock pot.  Making chicken soup in a crock-pot is easy and you don’t have to stand over the stove all day. To get started first decide what kind of chicken you want to use.  You could boil some chicken breasts on the stove first or you can use the already cooked chicken that you find in the freezer section of the grocery store.  You may think that it won’t taste as good but it really does. 

You can buy the chicken breast strips or you can even buy the chicken already cut up for you.  Throw that in the crock-pot with your favorite brand of chicken broth.  You can again buy the canned chicken broth, which is very good, or you can make your own.  You want to add about five or six cups depending on how much you want to make.  The next step is to cut up some celery and some carrots. 

You can add fresh or you can use the frozen carrots if you want.  Sometimes you may want to add some frozen or canned peas or whatever other kind of vegetable that you want.  You can throw in some chopped onions and some basil and garlic powder or salt. 

Add a little regular salt and pepper, use as much or as little as you want.  The next step is to add the noodles that you want to use.  You can use some egg noodles or maybe some elbow macaroni.  Any kind of noodles will work.  It depends on what you and your family like to eat.

If you need to add more chicken broth to cover the noodles, you can do that.  The nice part about using the crock-pot here is that you do not have to cook the noodles first.  They will cook up right there in the pot, soaking in the taste of the chicken and the broth.
